The short version

Baked goods are where serving sizes get genuinely varied: a slice of bread, three cookies, one muffin and a slice of cake are all governed by different reference amounts. For a bakery selling a range of items, the label work is really about applying the right serving to each product — and about the allergens that live in nearly every recipe.

Serving size — the part people get wrong

Reference amount: Varies by item: bread 50 g, cookies 30 g, muffins 55 g, cake 55 g. Each bakery format has its own reference amount: bread is 50 g (usually ~1 slice), cookies are 30 g (often 2–3 cookies, not one), soft muffins/quick breads are 55 g, and cake is 55 g. A single large muffin at 110 g is two servings unless clearly single-serve. The 'per cookie' assumption is the usual mistake — 30 g is frequently more than one cookie.

Allergens you have to declare

Baked goods are the most allergen-dense category in cottage food: wheat is in almost everything, eggs and butter/milk in most recipes, and tree nuts, peanuts and soy (lecithin, oils) appear constantly. A plain chocolate-chip cookie typically declares wheat, milk, soy and eggs. Declare each by specific name — this is the label element with the most real-world liability for a bakery.

Claims you can (and can’t) make

Every nutrient-content claim on the package has a legal threshold the panel must back up. For baked goods, the ones that come up most:

Where baked goods makers slip up

'One [item]' usually isn't one serving

The reference amounts are weight-based, so a serving of cookies is 30 g — often two or three cookies — and a serving of bread is 50 g, roughly one slice but sometimes two thin ones. Declaring 'one cookie' when a serving is really two doubles all your per-serving numbers and makes your product look worse than competitors who label correctly.

Sub-ingredients hide the allergens

The allergen you'll miss is the one inside a compound ingredient: soy lecithin inside chocolate chips, milk inside caramel, wheat inside a spice blend. You must break compound ingredients into their sub-ingredients in the statement, and the allergens they contain flow up into the Contains line.

The reference amount for cookies is 30 grams, which is frequently two or even three small cookies — not one. Weigh your cookies and set the serving by grams. Declaring a single large cookie as the serving is fine only if that cookie actually weighs around 30 g.

What allergens do baked goods have to declare?

Whatever Big-9 allergens are present — and for baked goods that's usually wheat, milk and eggs at minimum, plus soy (via lecithin in chocolate) and any nuts. Declare each by specific name, and remember allergens hidden inside compound ingredients still count.

Do home bakers need a Nutrition Facts panel?

Cottage food laws in most states require an ingredient list, allergens, net weight and a home-kitchen disclosure but not a full Nutrition Facts panel — unless you make a nutrition claim or sell across state lines. Many bakers add one anyway for wholesale and credibility.
